I had the recent revelation that one of my favourite easy, breezy meals of summer could be made in the winter (albeit with the help of out-of-season frozen or canned vegetables)!
Enter: a bag or can of frozen, organic, non-GMO sweet corn.
Why didn’t I think of this before?! It’s affordable and even quicker and easier than the real deal (husking and cutting the kernels off the cobs). A taste of August amidst the blizzards of February. Of course, it’s not quite the same as the Blum’s sweet, creamy, golden Prince Edward Island corn – but it’s a nice prelude of what’s to come – the summer after the spring – we’ll be there sooner than we believe.
